Last summer, I cooked a 14 person dinner party in the heart of downtown Toronto. The theme was Spain meets Ontario. Like all of my menus, it was customized for the party and featured in-season, local produce.
Amuse bouche charcuterie:
Red snapper ceviche with zucchini and shallot tops on tostadas
Grilled peaches with Marcona almond crumble
I worked with a local wine importer who paired beautiful Spanish wine with each course. The clients invited me to eat with them and explain the flavours and the inspiration behind every dish. We ate outside at sunset and finished the meal with dessert under the stars.
