Sample Menu

Last summer, I cooked a 14 person dinner party in the heart of downtown Toronto. The theme was Spain meets Ontario. Like all of my menus, it was customized for the party and featured in-season, local produce.

First Course
Amuse bouche charcuterie:


  • Serrano ham 
  • Manchego 
  • Pickled Ontario vegetables
Second Course
Canape trio:

  • Pan con tomate
  • Fried mushrooms with Ontario herbs
  • Tuxedo style Spanish anchovies 

Third Course
Red snapper ceviche with zucchini and shallot tops on tostadas

Fourth Course


  • Twice cooked flank steak and lengua with Ontario watermelon radish aioli
  • Crispy potatoes with Mojo Rojo
Fifth Course
Grilled peaches with Marcona almond crumble

I worked with a local wine importer who paired beautiful Spanish wine with each course. In this case, the clients asked me to eat with them and explain the flavours and the inspiration behind every dish. We ate outside at sunset and finished with dessert under the stars.
